Oven Roasted Jerusalem Artichokes

a.k.a. Better Than French Fries
Ingredients
- 1 pound Jerusalem artichokes, sliced and washed very well (do not peel them)
- 3 tablespoons olive oil
- salt and pepper to taste
Instructions
- Preheat the oven to 350 degrees.
- Toss the Jerusalem artichoke slices with the olive oil and salt and pepper. Place on a baking sheet and bake for 20 minutes at 350 degrees. Using a spatula, turn the slices over and cook for another 15 minutes. They should be brown and crispy on both sides. Serve immediately.
