Oven Roasted Jerusalem Artichokes

  1. 1 pound Jerusalem artichokes, sliced and washed very well (do not peel them)
  2. 3 tablespoons olive oil
  3. salt and pepper to taste
  1. Preheat the oven to 350 degrees.
  2. Toss the Jerusalem artichoke slices with the olive oil and salt and pepper. Place on a baking sheet and bake for 20 minutes at 350 degrees. Using a spatula, turn the slices over and cook for another 15 minutes. They should be brown and crispy on both sides. Serve immediately.
