Simple Kale (or Arugula) Salad

  1. 1 bunch kale, one bag baby kale, or one bag arugula washed well
  2. 2 tablespoons really good olive oil
  3. salt and pepper to taste
  4. one very sharp knife
  1. Remove the tough stems from the kale (not necessary if using baby kale or arugula). Lay 4 or 5 leaves on top of each other, fold the whole pile in half, and slice the kale width-wise as thinly as you possibly can (again, not necessary if using baby kale or arugula). Repeat with the remaining leaves until all have been chopped. Toss the kale with the olive oil and salt and pepper. Put in the refrigerator and let sit for at least a half an hour or up to one day. The longer the salad sits the better it is. If using arugula, eat immediately, it will not hold up over time.
