1 cup golden raisins<\/li>\t\t\t\t
1-2 teaspoons fresh ginger, grated<\/li>\t\t\t\t
\u00bd cup sour cream or yogurt<\/li>\t\t\t\t
grated zest from 1 lemon or orange<\/li>\t\t\t\t
1 teaspoon lemon juice or orange juice<\/li>\t\t\t\t
salt<\/li>\t\t\t\t
4 cups carrots, peeled and grated<\/li>\t\t\t\t
2 scallions, chopped<\/li>\t\t\t\t
sugar or honey to taste (optional)<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t

Instructions<\/div>\t\t\t
1. Cover raisins with hot water and let plump up for 20 minutes or so. Mix together ginger, sour cream, lemon or orange zest, lemon or orange juice and salt to taste.<\/li>\t\t\t\t
2. Combine carrots, raisins and dressing. If not sweet enough add some honey or sugar. If using yogurt definitely add sugar or honey.<\/li>\t\t\t\t
3. Garnish the salad with finely sliced scallions.<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t
