1 1\/2 pounds sweet potatoes, preferably garnet yams, peeled and cut into 1-inch chunks<\/li>\t\t\t\t

3 tablespoons olive oil<\/li>\t\t\t\t
2 thyme branches<\/li>\t\t\t\t
1 cinnamon stick, broken into pieces<\/li>\t\t\t\t
1 teaspoon kosher salt<\/li>\t\t\t\t

1. Preheat the oven to 425 degrees.<\/li>\t\t\t\t
2. Put all the ingredients in a baking pan and toss to combine, then spread out in an even layer. Roast until the potatoes are tender and browned, 25 to 45 minutes.
