1 pint blueberries, blackberries, raspberries or nectarine<\/li>\t\t\t\t

2 eggs, separated<\/li>\t\t\t\t
1 teaspoon lemon zest<\/li>\t\t\t\t
3 tablespoons lemon juice<\/li>\t\t\t\t
1 \u00bd tablespoons flour<\/li>\t\t\t\t
pinch salt<\/li>\t\t\t\t
1\/3 cup sugar<\/li>\t\t\t\t
1 \u00bd tablespoons butter, melted<\/li>\t\t\t\t
1\/2 cup milk<\/li>\t\t\t\t
1 tablespoon tapioca<\/li>\t\t\t\t
powdered sugar for dusting<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t

Instructions<\/div>\t\t\t
1. Preheat oven to 350 degrees.<\/li>\t\t\t\t
2. Combine cleaned fruit with the sugar and set aside. Whisk egg yolks with lemon zest and lemon juice. Whisk in flour, salt and sugar until smooth. Whisk in butter and milk. Beat egg whites until firm and fold into batter.<\/li>\t\t\t\t
3. Gently combine tapioca with fruit. Place fruit in a buttered casserole and pour batter over the top. Bake at 350 degrees for 45 minutes or until brown on top. Dust with powdered sugar.<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t
