2 tablespoons butter or olive oil<\/li>\t\t\t\t
1 onion, chopped<\/li>\t\t\t\t
1 celery stalk, chopped<\/li>\t\t\t\t
1 medium potato, peeled and chopped<\/li>\t\t\t\t
5 \u00bd cups chopped carrots<\/li>\t\t\t\t
2 teaspoons minced fresh ginger root<\/li>\t\t\t\t
6 cups vegetable or chicken broth<\/li>\t\t\t\t
7 tablespoons whipping cream<\/li>\t\t\t\t
a pinch of nutmeg<\/li>\t\t\t\t
salt and pepper to taste<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t

Instructions<\/div>\t\t\t
1. Put the butter or olive oil into a soup pot. Add the onion and celery and saut\u00e9 until translucent and soft, about 5 minutes. Add the potatoes, carrots, ginger and broth. Bring to a boil, reduce heat and simmer for about 20 minutes. Pour the soup into a food processor, blender, or a food mill and puree until smooth. Return the soup to the pan. Stir in the cream and nutmeg and add salt and pepper to taste. Reheat slowly then serve.<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t
